I would like to add the "pick up and pay in store" function to my shop.
how can I do? I can't find anything in the options.

Add it as a manual shipping option

For the “pay in store” part, that’s not really possible as you can only have
Stripe, PayPal Onsite or “IBAN” ( https://www.bricklink.com/help.asp?helpID=18
).
