Horse is VLBG and has been compared to known VLBG parts (KKII Shields and photo will follow). Flowers are Bright Pink in the official LEGO inventory.

Not so fast! I saw this request and went straight to my inventory because bright
pink is the only color of this part I am still looking for for my collection.
I kinda hoped I had missed it. But I didn't. I merged the piece from this
set in with others, but I a bag full of pink and haven't sold any since I
parted out the set.

They may have eventually switched to bright pink, but my most recent partout
of the set was an early one. I got all the weird colors.

Thanks, I had hoped you still have them in stock.

So this clearly demonstrates why we do *not* (just) rely on the official inventory
data.
Maybe late copies of the set came with bright pink flowers (if we find proof
from an original set they can be added as alternates) but it is also well possible
the set always came with pink flowers and the bright pink ones were added to
the online inventory afterwards to give people an option to buy replacement parts
in a similar color.

Knowing that sets in 2004 used retired colors from the previous year is very
intriguing. The only reason I had asked about the horse is because sets after
the color change of 2003 did not use colors that were retired at the end of 2003.
I found it weird that the inventory for this set had a 'Very Light Gray'
horse, given that Very Light Bluish Gray replaced it. It's also the same
reason I bought set 7496 and checked the Light Violet part out, which turned
out to be its very rare replacement. The fact that this set uses Pink AT ALL
and not the older browns/grays is very interesting. The horse does appear to
be VLBG based on the photo, but the flowers are what shock me.

Light Violet's replacement is a color that doesn't have its own Bricklink
ID. It is called Light Lilac and is not known to appear outside of Duplo minifigure
torsos and a 2x2 Duplo Brick. Ryan's Flickr page for this color: https://www.flickr.com/photos/126975831@N07/14983555459/in/album-72157649729890049/

There's a discussion somewhere on Bricklink about my set 7496 and how the
render for the set may have been a prototype, seeing as it doesn't reflect
what came out of the box. There's currently one Light Lilac 2x2 Duplo Brick
on sale.

Maybe they had so many flowers in light pink in stock that someone decided to
still use them in this 2004 set instead of switching to bright pink right away.
After all the flower color is not that important because it does not need to
match with anything else in a set.
And we know TLG does not throw anything away. They even put their loftover stock
of old gray parts in sets released in 2005. Three examples which I can confirm
personally from sealed set contents:

Set No: 4766 Name: Graveyard Duel
*
4766-1 (Inv) Graveyard Duel
518 Parts, 6 Minifigures, 2005
Sets: Harry Potter: Goblet of Fire

Set No: 4767 Name: Harry and the Hungarian Horntail
*
4767-1 (Inv) Harry and the Hungarian Horntail
252 Parts, 3 Minifigures, 2005
Sets: Harry Potter: Goblet of Fire

Set No: 4888 Name: Ocean Odyssey
*
4888-1 (Inv) Ocean Odyssey
623 Parts, 2005
Sets: Designer Sets: Harbor

Right, I’m aware of the fact that they were used as alternates. I believe a 2006
Batman set of mine had a leftover 1x6 plate in old light gray. I just wasn’t
aware that they used retired colors as main parts even after the color was retired.
Interesting!

If they have enough of an old color sitting around in warehouse inventory to
do an entire production run before switching to new inventory, I see no reason
why they wouldn't do exactly that. LEGO does not throw away anything that
they can use.

This is why we do not rely solely on "official" LEGO inventory data that is retrieved
from the replacement parts service for use on Brickset. That data is for obtaining
replacement parts for a set from LEGO. It is not a historical record of a set.

How do we feel about cloth/non-brick parts in a set? For instance, set 10210
may have Very Light Bluish Gray sails. I'm not too sure about the way cloth
parts work, but a change from White to VLBG sails has been made before in set
6243.

6243.

If the cloth parts are truly VLBG, they can be changed to that. Looking at the
catalog images and reading the additional notes on those sails in 10210 makes
me lean towards VLBG myself. We would need proof, though, such as an image of
the sails set right along known VLBG parts.

Magnets are a weird place to look for parts, but these flowers also exist in
Light Yellow.

I am sure they were made on a sprue and that means someone might have some.
