I just sold £120 worth of minifigs to someone in France and I'm in the UK.
They have paid the sales (supply?) VAT via BL. Does anyone know how I would prove
this has been paid when I fill out the CN22 form on the package?

You should receive a copy of the invoice to join to the package.
The invoice and IOSS should also be available in the order details page.
