The humble British home made chip can be made from a variety of potatoes, not
all, needs to be more starchy and less water content.

Most favoured here are Maris Piper, others are Russett and King Edwards, the
latter will have a slightly different taste, use larger potatoes.

These are washed, peeled, cut into chips and fried or skin left on and fried,
I like both forms and usually leave the skin on.

I’m happy with any of these varieties.

Better and healthier oils etc for us, if fried chips can be healthier, is sunflower
oil, there are others that are considered better by some.

Some oils aren’t good/safe at the higher temperatures used for chips.

The older method uses lard / beef tallow, absolutely slammed as unhealthy at
one time but not so frowned on anymore.

I do like them done this way as I grew up with this being the standard method,
they still sell well where they fry them this way, the Black Country museum being
one.

Probably long forgotten is that these chips were once wrapped in unused newspapers,
outer wrap, but print could transfer to contents, now they have an offwhite paper
purposely made.

The chips are fried in what we surprisingly call a chip pan.

Images of our pan, others may use larger pans, and home made style chips attached.

Pringles for scale, don’t make them myself.

I grew up on what was considered the butcher’s cuts for the poor: gizzards, liver,
tongue, feet...my mother would make into fantastic meals.

How are the "homemade" chips in the UK made? What type of oil and potato
is used?

Mouthwatering! On Flickr, not too long ago, I saw an AFOL post his homemade haggis
and Scottish mashed potatoes (with neeps/turnips) and wanted to try it ever since.

The sky's been flooding rain here. Was in the mood for a hot drink, and a
local mixmaster, Justin, developed my wishful thinking into something better
than I could even imagine (four seasons oolong, roku gin, yuzu sake, homemade
honey and shiso syrup).

It was awesome. I'll probably dream about it.

Very nice.

Some older foods are better eaten without knowing the contents, they taste nice
but knowing the ingredients can spoil the experience.

I too grew up were liver, kidneys and much more were common place, didn’t like
a number of things myself but liver, kidneys and faggots I still eat.

Haggis was added later when I decided to try it, my parents never offered it
as we lived in the Midlands ( Birmingham ) and haggis was something odd from
Scotland.
