Well, it’s not an adjective, it’s a noun. It’s used to qualify another noun
but it’s still a noun
Now, there’s still no agreement (number (singular/plural), gender…) in English
for nouns used as attributes, so LEGO stays LEGO in “LEGO bricks.”
In French, if LEGO were an adjective, it would have to agree with “briques,”
so it would be plural. But as it’s a noun, it doesn’t. “Briques LEGO.”
As there’s always a language that does things differently than the others, I’m
sure there’s at least one in which a noun agrees/is declined when used as an
attribute.
It’s not that LEGO doesn’t want their brand to follow grammar rules, it’s that

Oh, I agree. I don't mind people calling it "legos" — people are
under no obligation to abide by corporate naming conventions. (I get why they
do it, and if you're representing TLG in any professional context, you should
probably follow their branding guidelines.) But IF you're going to try to
correct someone's usage, at the very least don't say that LEGO is already
plural That's not how adjectives or even collective nouns work, adjunct
or not

This may be a regional thing — but yes, my family is collectively the Howerters,
that sounds correct and I've heard that usage many times before. The Bushes,
the Obamas, the Kardashians, the Rosenbergs, the Wachowskis, the Clintons all
sound very natural to me.

It seems as though Europeans tend to use the word "lego" as a mass noun,
for example:
one lego brick, two lego bricks, a box of lego, made out of lego
However, Americans tend to use the word "lego" as a count noun, for example:
one lego, two legos, a box of legos, made out of legos
This seems to be part more general preference for mass nouns in British English
and count nouns in American English, for example:
In British English: mashed potato, scrambled egg, play sport, pay tax
In American English: mashed potatoes, scrambled eggs, play sports, pay taxes
Perhaps the LEGO Group is afraid that if people begin to use the word "lego"
as a count noun, then they may inadvertently apply it to similar toys produced
by other companies, thus weakening the strength of the brand.
