simple text formatting in the "Message Templates" in these descriptions  .

Thank you for this information! Unfortunately, I can't find anything about
simple text formatting in the "Message Templates" in these descriptions .

Because there's no formatting possible due to the TEXT format of messages/invoices,
etc.
It doesn't send HTML e-mails.

You could try simple formatting like _italic/underline_ *bold*. I think most
clients (MUA, webmails…) should know how to show them nowadays (though spaces
and punctuation often break things).
Also, HTML e-mails are evil, long live ASCII art!
