| The IC instructions talk about flagging an item for manual packaging type for
shipping (override IC), but I cannot seem to figure out where to do that. Anyone
know how?

Select manual under the packaging type menu for the item in your inventory.

| I don't have a drop down like that on my item edit screen. Would you be
willing to show the screen where you do that?

You probably need to enable the option.
Go to Store - Settings - Management...
https://www.bricklink.com/v2/mystore/display.page
Scroll down to the 'Store/Inventory Options' section and tick 'Enable
my weight and my packing dimensions...' (see pic).
Don't forget to hit the Save Changes button.
Once that is enabled, go back to your Inventory and find the relevant part/set.
You should see an extra section with Weight, DimX, Y, Z etc... the drop down
you want is 'Pkg type'. Set that to 'Manual Only'.
