Does anyone know why the torso image doesn't show up at the inventory of
part 973pb2652c01, though there clearly is an image for torso part 973pb2652?

This happens with most torso assembly inventories these days.

I don't know if it is anything to do with the missing colour assignment for
the torso.

Every torso assembly inventory is like that. The reason is nearly obsolete in
modern LEGO, but the reason is that the same torso could be released in more
that one color and if it had the same arms and hands it could be considered the
same torso in our catalog. So when you part it out, this way, the system will
give you a torso with whatever color you specified for the torso assembly.

It was a little difficult to find an example other than the plain torso, but
I did.

Thanks for the clear explanation. I did see the color assignment was "missing"
on the torso, but didn't know why. Your explanation makes total sense, although
indeed it may no longer be relevant for newer torsos.

Someone would also have to take a picture, or create a render, of the torso w/o
arms.

The example torso does have an image:

Part No: 973pb2652 Name: Torso Dark Blue and Reddish Brown Vest with Zipper and Pockets, Black Belt, Silver Buckles Pattern
*
973pb2652 Torso Dark Blue and Reddish Brown Vest with Zipper and Pockets, Black Belt, Silver Buckles Pattern
Parts: Minifigure, Torso
But only for Reddish Brown, so it does not show in an inventory because it’s
N/A there.

It does not show either on the forum if you specify colour 0 (N/A):

Part No: 973pb2652 Name: Torso Dark Blue and Reddish Brown Vest with Zipper and Pockets, Black Belt, Silver Buckles Pattern
*
