I tried after a lot of time that I didn't need this option, to remove an
item from the order.
That was not possible, and no explanation why were given.

Can someone explain me these news?

Enter Order Number

Edit order items, change quantity or delete items.

Submit for approval from Buyer

Wait for approval, then proceed to process order normally.

Is the payment status on paid?
With the edit order button you can change it to none.
