It depends what you want to do. If you want a wide inventory but not much stock
of each part, buy one of as many different sets as possible and part them out.
If you want a lot of stock of the same parts, buy many of the same set. This
is easier to store and pick orders. If you want a fast moving inventory, research
which sets you can buy cheaply that have popular selling parts. If you want a
large inventory at minimum cost to you, buy art sets with loads of 1x1 round
plates and tiles. If you want to retain a large inventory, increase prices so
nobody buys the parts.

There is no button to tell you which sets to buy. If there was, everyone would
have the same inventory which would make those parts over stocked and more likely
to need to be discounted to sell in the future.

Personally, I wouldn't focus on just the number of items, but what those
items are.

In addition to what yorbrick said:
My strategy is to have a wide selection (over 5,000 lots) and at the same time
have many parts for items that sell well.

Parts that sell very good:
- 1x1 plates, followed by 1x2, 1x3, 1x8, 1x10 etc.
- tiles of any size, but especially 1x4, 1x6, 1x8, 2x2
- plates 1x and 2x, they all sell very well
- curved slopes and snot bricks
- all items in the Plant category: https://www.bricklink.com/catalogList.asp?catType=P&catString=25

Parting out Stars Wars sets did not prove to be successful for me. They come
with many technic beams which do not sell at all and with large wedge plates
that also are somewhere in a drawer that I never opened in the past year. (see

the smaller than 2x4 ones do sell though)

But the most sought after parts are 1x X bricks in the colour light bluish grey
and dark bluish grey. You can never have too much of those!

A secret advice to you (that I learned the bad way in the past): do not sell
highly sought bricks for less than the average 6 months price.

I use many themes for parting out. The good ones (at least for me) are in order
of importance: Creator, Brickheadz, Friends, Minecraft, City.

The best way to get the most desired items is to buy multiples of the modular
buildings but that is quite an investment.

As a final strategy I would say: copy your wanted list. Personally I'm
a MOC builder: the items I don't have in my own shop are the items that sell
very well!
