I just noticed that the order from a buyer (who has a Pennsylvania address) shows
payment in Euros, not dollars, should I be concerned, or will PayPal convert
it to the dollar amount?

It should, unless you accept Euros as a currency.

If PayPal converts you will lose on their exchange rate. I would ask the buyer
if he/she choose EUR by mistake or would really pay in EUR. If it was just a
mistake you can change it to USD and resend the invoice.

How do I change the invoice to only dollars? I was unaware that I hadn’t deleted
Euros (never had this issue before). Does the buyer have to redo the order or
is there a simple fix?

Open the order and at the bottom of the page click Edit Order. Change the "Payment

Personally, I would just complete the order as-is and take the conversion rate
hit instead of making it a hassle for the customer. After all, the customer placed
a valid order and used a valid currency (according to your shop settings).

Obviously going forward you want to change your shop settings, but I would not
change anything for the current order.
