Help, when I look at stores, the page is huge and I have to zoom in to see anything and can only see some items, how can I restore the stores page so I can see what im ordering [...]

For my quote option it looks like this and I have "Accept Quote Requests" enabled in store management just like you. perhaps try adjusting your setup to work similarly.
