| Is there a new way to update my instant checkout for shipping?
Normally I would go to My Store and Settings then Shipping and then click on
one of my options to change it. Now, my shipping methods appear, but I can't
see how to edit them. Any advice?

Interesting! As no one has chimed-in...
You're not getting "Method" as active links?
Try logging out - clear browser history - log back in selecting "Preference
Cookies" Don't know, but see if it flys home for the winter

| I tried your suggestion and cleared browsing data as well as clicking on the
preference cookies when I logged back in, but still no access to my shipping
methods.

System? Browser?
So few information when you've got a problem 
Say Win10 and Edge?
Then install a brand new Firefox, and test the same thing...

I have also tried editing it on a PC on Chrome as well.
I just tried on Safari on my Mac and the editing options appeared. Thanks for
suggesting a different browser.
Is there anything I can change in Chrome so it works?

Do you have any extensions enabled? That could mess with things.

Yes - Chrome is Evil, change chrome!!!
Short story, using Chrome, Google knows what they wish on all what you're
doing.
Do as you wish, can't help you much on Chrome which obviously I don't
use.
Maybe try to do some searches, but it's going to be difficult, just describing
the issue...
At least for some time, Frankly, just install Firefox on Mac?
Free, open-source, respecting privacy and all.
I don't know if it works well on Mac neither, but at least, for some time
use a differen browser?
