Not able to change status to paid after off site payment.

If it was sent to a place that requires sales tax to be collected then payment
has to be onsite or else you’d be keeping the collected tax which is illegal
if it is going to a place with sales tax then refund the buyer via how they
paid and ask them to pay onsite.
It’s the only way

Also I think those who started selling after 2017 or so can only offer onsite
payment methods in any case, unless they get permission from admin to offer bank
transfers
