| Maybe I am missing something, but is there an easy way in the Inventory to see
how many of a certain part I have (independent of color)?

In BrickLink you could in the Inventory page, but only by Categories (Bricks/Plates...)

Ah yes but then it'll always show you this until you unset it back.

Ah yes but then it'll always show you this until you unset it back.

You can leave it as so and if you want to know how many lots you have it is a
click alone and the results page of your inventory shows that info:
