Can someone explain what settings I need to activate in the shipping settings
field to offer free shipping beyond a particular price point?

I would like to set up a shipping option to offer free shipping on parts and
figures if the buyer spends over a certain amount. Would it be possible to include
specific categories while excluding others in the shipping settings?

Quickly...

Create a shipping method with zero fee and a minimum price (ex: 100$) I think
it's at the bottom of the ship method page.

But you CAN'T restrict to some type or category.

Anyway you can set up a maximum weight and size, which, all combined (min value,
max size and weight) will probably give the same result.
