I recently purchased a set that was glued together to include the minifig. Luckily
the seller was honest and friendly and refunded me saying he had no idea that
set had been glued by the person he bought it from.

Does anyone know any methods to get the glue off the parts without damaging them?
There are no stickers so I don't have to worry about ruining those. Will
something like goo gone work?

Are you sure it is not an original LEGO glued set?

What are original LEGO glued sets? I have never heard of that. I would think
it isn't since only some of the parts are glued, including some technic parts
that are supposed to be able to rotate.

At least for the last couple years LEO would never glue sets for their stores,
they display them built normally then either let employees have them or send
the bricks back to be recycled into other sets. Sometimes the big display pieces
that aren't official sets are assembled and glued, then sent to the stores
in larger chunks. Was there a time when they glued them together, or was this
just done by second party stores that wanted to make LEGO displays?

Lego Stores do build the sets by their employees, but for other stores like Toysrus
etc they sent glued models, but those are usually in a cubic box with backdrop
decoration too.

Yes, all the old sets for store display were glued, there are collectors for
that

You could order glued models from a LEGO catalog for your store.

I think there are still sets officially glued by LEGO, mostly the store display
cases.

I have one like the first picture, but there are many more.

I wouldn't bother. You will end up with a pile of worthless, damaged bricks.
You might as well have a glued set that can be displayed.

No, unless it's Elmer's glue or craft Glue (glue gun). Most glue chemically
reacts with the plastic to melt it together.

Depending on the set, it may have value as is. Sold these to a LUGNET member
who wanted to display them at shows but didn't want to risk putting out his
"real" ones:
