I have around 40 used sets. About half complete and half almost-complete. About
20 of them are Friends, 10 Star Wars, and 10 various.

Does it make more sense to sell the incomplete sets as sets, or to part them
out? Or should I part everything out?

I'd be grateful for any advice.

This my experience with incomplete used sets:
They don't sell. I had some in the past (still have a couple for sale) but
they wouldn't sell. You better part those sets out. In every Friends set
there are some parts wich are sold for good money. Also when you partout the
sets your store has more objects for sale and you are more attractive to buyers.
You can put a lot of effort in making sets complete or part them out. The last
is the most valuable. Only old or exclusive sets sell incomplete.

Thanks Pelgrim, that's very helpful.

Many of my incomplete sets have only a few parts missing, perhaps 1 to 4, so
I guess I'll start by parting out the few with more than that, and the ones
where some of the few parts are the more expensive or harder to find.
