I see in my Part Out Log* a set that I surely didn't part out.
Sometimes I do a partial part-out (for example only the bricks from a set and
not the minifigs or vice versa) but I bought this particular set only for my
pleasure to build.

The set was
 
Set No: 80107  Name: Spring Lantern Festival
* 
80107-1 (Inv) Spring Lantern Festival
1761 Parts, 8 Minifigures, 2021
Sets: Holiday & Event: Chinese New Year

Any idea how this could happen?

Perhaps you clicked the partout button to see the inventory/brick prices and
even thought you didnt add it to your inventory it might have added it as a partout
because you entered the set number and clicked partout.
Just guessing

Agreed, I have never used the part out feature for inventory but have sets in
my part out log. I think I was testing the feature.

One way of confirming that this is the case is to check and see whether any of
the parts unique to this set are in your inventory.
