the legs instead of the whole piece?

maybe both?) being damaged from what I remember so they don’t have entries for
that (aside from the base entry). However a while back, they purged all (except
73200 plain) as no one really uses them and it takes a lot of time to add them

remove legs without damaging the legs or the hips.

Problem is; you're not supposed to modify something shipped by LEGO otherwise
it cannot be New anymore by BrickLink definition.
And I don't remember LEGO shipping legs separated

Not likely in many cases. There is a reason there is a little "hook"
on the hips pin that prevents removal of the leg. Although I have done it, it
is not easy to remove a leg without damaging that hook in some way. Most of the
legs will be fine, but the hips? Nope.

Same here. I always find that legs are a little wobbly if they are removed then
returned to hips.
There is probably also less reason to do it for legs than for arms. On older
parts you can find cracked arms and cracked torsos, so it makes sense to harvest
the parts. Whereas legs can occasionally crack near the foot, but hips? I don't
think I have ever comes across broken hips where the legs are not damaged.
And in the past, monochrome torso and arms assemblies were not always available
even though the torso and arms exist. Although that is less common now, so monochrome
collectors have it easier now.
