Ad long as Stripe has the money, I absolutely don't care when I'll be
able to transfer it to our account. My opinion though.

+1 as soon as stripe has the money I consider it paid. The only time I don’t
consider it paid after the buyers sends money is the PayPal echeck in which case
never until it clears although those are extremely rare

You are conflating two unrelated parts of the payment process, a capture and
a payout.
A payout is where Stripe determines it is time to send you the money.
A capture is when Stripe has captured the funds from the card holder.
If this is your first Stripe transaction, then you may be in a probationary phase,
when your payouts are delayed. Eventually your payout will be 2nd business day
after the capture.
