Hello!

I sold to a customer who wanted to pay in 3 separate installments and directly
into my PayPal.

It has been done correctly and I have shipped the goods.

I am now struggling to change the status to paid or shipped or anything else
other than ready.

What can I do?

Does the order have any VAT/tax charged on the invoice by BL? If so, you're
not supposed to take offsite payments for it because now you have the tax paid
to you, and not to BL (it's automatically stripped from the payment by PayPal).
The only way to fix it is refund the $ they sent you in 3 installments, and have
them pay again in a single installment with the pay button onsite.

One last comment: I have added (after the fact) both columns (payment and order
status) and it's greyd out. I still can't make any changes

No, there isn't. Your choices are to refund and potentially upset your buyer
or do nothing and end up with tax money that isn't yours.

they rolled out this sales tax/VAT plan. It seems unlikely due to complicated
logistics. So, here we are, stuck with a flawed system.

You are not alone. There are stores with 5-figure feedback dealing with the same
issue.

BK Bricksters is very new to selling and we have lots to learn.

I have followed all of your advice and refunded the money and stopped the shipping
of the goods from taking place.

I am afraid of upsetting our customer but since we do not have a choice, then
it is what it is!

I think not only complicated: it’s simply illegal.
BrickLink is the one who is authorized to collect and remitt the tax.
The sellers aren’t authorized to collect those taxes¹.
