Can you help me identify the color of the left part 87580 on the picture? I took
it for a medium azure but after comparing to other parts I noticed it's considerable
lighter than that. I can't find a matching blue in the bricklink listings
and it does not appear to be discolored because the color is uniform.

If I had to judge your picture my first guess would be medium azure on the left,
and medium blue on the right...
But since you say the right one is medium azure, it doesnt look like a known
color.
It actually looks like the one on the left doesnt have enough color pigment added
to the plastic (Notice the 'milky/cloudy' look it has).
I've seen that happen with light bluish gray parts in the past.
So it might be a bad quality part.
