is there a way for to add an item in my Wanted List selecting all colors with
only one entry?

What do you mean by one entry? When you add an item to one of your wanted list,
you have to select either a single color, or "(Not Applicable)" which will make
the Auto-Select feature of the Wanted List Buy page pick the cheapest color among
stores that carry that part.

In Wanted, re_collection writes:

Just select the color "Not Applicable".
