Why can a seller change the order status in my account from shipped to completed
even though I haven't received the order yet?

4 Orders shipped, change status when received (?)
I can understand changing his account, but changing my account?

No there is no "account" concept.
The order status is common to you and the seller and he can change it to Completed
- which is considered as bad by many, including me.

we also need "order is being in processed" or "being pulled"
or something to that effect so the buyer knows what's going on.

Does "Processing" not do it for you?

Is that a valid order status for a Paid order? I don't think it is.

I placed an order and paid.
The status was then paid and one day later, shipped.
I haven't received the order yet, but now the seller has changed the status
from shipped to completed.

Yes, you can go up and down on order status if you have them decoupled from Payment
Status.
I use InSpace BLS Manager to pick orders and when I start picking it changes
automatically to Processing, finished the last lot it auto changes to Ready,
then when I create the label I change it to Packed.
