I've had a couple of orders been stuck on the Paid/pending order status for
a about a week. I cannot seem to cancel anything on Bricklink because it doesn't
recognize it as a problem.
There is nothing in regard to the payment being received or denied on Paypal
either. I'd love to know if anyone has run into this before or not.

Very common.
Search for "Paid!" (without brackets) in forum search.
Buyers trying to scam by not clicking through all the re-directs OR PayPal attached
CC declined the funds. Either way, cancel the order and don't ship.

Only a few cases would be buyers attempting a scam, most are from unintentional
glitch cases
