I have made several large sets but I am new to Bricklink. I have a friend who
has a black 1961 Corvette. Set 10321 is a red 1961 Corvette. What is the easiest
way to order bricks to build the set in black?

I would:

Download BrickLink, free, open source:
https://www.brickstore.dev/

Open the set inventory.
Sort by the Color column.
Select all red, right click on a color, change color to Black...

Some parts may not be available, or very expensive in ths color, so you've
to check them vs the included Price Guide.

Hi,

I would use Studio for that. That means building the corvette in Studio, then
play with the colours.
The big advantages are that you only change the visible parts and Studio can
tell you in what colours a part exists and their prices.
You can also try and replace parts (split or merge them) if the originals don't
exist in the colour you want.
And then you upload your model as a Wanted List.
