I haven't used the wanted list in quite awhile, and never in this way. I
am currently working on some various functional Technic models, and right now,
I am only interested in making practical working test models to tweak. Made the
first digital model in Studio, then imported to a new wanted list.
Now the question: Is there any way to tell the wanted list that I am happy with
the chosen parts in ANY color? I do not care which color (or condition), so long
as I can get the correct part types to build the practical model. Or am I
expected to research each part type to determine what is likely to be the cheapest
color? Even that solution wouldn't work well with easy buy, as it would be
searching for that given color and would ignore stores that might have it in
another color cheaper.
If this is in fact not a current option available, I would very much think it
needs to be a future added feature.

Yes: use the “Not Applicable” colour.

The algorithm is weird!
I have absolutely no idea how the colour is chosen but:
— It’s not the global cheapest.
— It’s not the cheapest in the stores that are chosen for other parts.
— It may even be the stupidest colour to choose! (I wanted a lot of plates,
mostly 2x10 & 2x14 but also others, in N/A, it chose Dark Red. Worst idea ever.
Nuts nuts nuts. I ended up setting the colours to mixed cheapest colours.)
I believe, but that would need more tests, that the colour is chosen before
the stores are chosen. And it may be chosen for [i|all[/i] the items in N/A.
(I wonder if EU’s DSA considers Auto-select/EasyBuy as algorithms “pushing” some
products to us and thus subject to publication of their criteria.)

If the message appears before you try to change the colour, see Nubs’ answer.
Otherwise, the site can’t abide two (or more) lots for the same part in the same
colour in the one list.
That means that if you have “part P in colour C1” and “part P in colour C2,”
you can’t use the Edit button to change the C2 to C1, or both C1 & C2 to C3.
The simplest solution is to download the list, edit it with another tool (like
BrickStore) and reimport it in BL.
