for sending packages because of their low prices, however, they need a phone
number, so it'd be very nice to be able to update/insert this again ...
Knowing how fast development happens on bricklink I'm going to assume we're
going to have to wait a few years for this to be fixed? :-/

Yes, it is very unfortunate and unprofessional in my opinion. Be sure to let
them know directly through the Help Center.
It's one thing not to be able to add a number (one could try and use part
of the address field for it or send the info directly when needed.) But not to
be able to change an existing number? It could cause major problems for members
who now have the wrong number listed.
If BrickLink has acknowledged this problem they created, I haven't seen it.

It’s not only Mondial Relay.
Mostly, here, for all packages that are not delivered by La Poste (and that’s
not easy to know), the driver phones before coming to check you’re home. That
way, they don’t waste time parking, looking for the package, ringing, waiting
for no answer…, and they go directly to the next client or the nearest depository.
And they don’t leave cards anymore.
If they don’t have a phone number, they generally just don’t show.
TL;DR: a phone number may not be mandatory but it’s darn useful.

Indeed, but in the bright side, it’s still possible to enter in the phone number
during the checkout process tho I’m doubtful it will save that to your account
