Hello! Too many items in this question, can't seem to pin an answer:
A customer did a quote, accepted bit wants to leave open to add, if they add
a bunch of stuff will I have an oportunity to adjust the shipping?

Yes. If they accept the quote it becomes the same as a standard we unpaid invoice.
If they add to it, it changes to the “updated” status and you then have to reinvoice
before they can pay

Reinvoicing includes updating shipping costs and such if wanted*

Ah thank you so much! It makes sense I guess or else everyone would accept a
100g oversize lettermail then add 2kg haha
