If I pull a brick from a sealed set that has been connected to another brick
inside the bags (but only slightly) does that make it used? Thanks!

Still new as far as I’m concerned, it happens all the time.

New. If it comes assembled from LEGO then the parts are considered new.

Here is the definition of "New" from Bricklink:
"New Parts - Parts are brand new, taken directly from new sets or were purchased
as New in another form such as accessory packs or Pick a Brick and have been
handled only for sorting. These parts have never been used in any manner. If
a minifigure or part assembly was originally sold assembled by the LEGO Group,
its component parts after disassembly can also be listed as new."
Yes, your part is still new.
