Is there anywhere definitive that can age bricks by the logo that appears the
bricks as all the googling I've done seems a bit vague.

Depending on the brick... find it in the Bricklink catalog. Then look at what
sets it was used in and the date ranges for those sets.

For example... say you have one of these in red:
 
Part No: 3039p23  Name: Slope 45 2 x 2 with Computer Screen and Right Side Buttons Pattern
* 
3039p23 Slope 45 2 x 2 with Computer Screen and Right Side Buttons Pattern
Parts: Slope, Decorated {Red}

Scroll down the list to set(s) that contained the part in red and voila, it was
a 1985 part.
 
Set No: 6377  Name: Delivery Center

   find it in the Bricklink catalog. Then look at what
sets it was used in and the date ranges for those sets.

For example...

Nice cherry picking, only in one set in that colour

Also, if the set used different variants, you won’t have the good years¹.

Also, it doesn’t work if the differences aren’t recognized by the catalogue,
like stud logos.

I should have probably given an example. On the CA bricks I have, there are multiple
different logos ie the O on lego is wide or narrow. Did the brick mouldings follow
the dates when the logos changed.
