Especially if you can’t tell where the link goes (that is, you don’t know how
to view, read and/or decode the URL).
(Okay, exceptions can be made if you were really expecting the e-mail….)

So I found the email on my iphone where I originally saw it, but get this. I
can ONLY see it when I have the phone oriented horizontally, and it's going
to my original email address that I thought I deleted off the phone, and it's
dated to 7/15/2000.
I'm officially getting old if I don't understand technology.

Not that I know of. (Usual disclaimer: I’m not a BL employee, they don’t tell
me everything, I may be a cat.)
There were “campaigns” to “clean” the membership of unused accounts just before
TLG bought BL in 2019. And there were a couple revisions to the ToS afterward
that necessitated explicit acceptance. But, AFAIK, nothing recently and nothing
you would have to do with a 2021 account.
Oh, now that I think about it, they may change a thing or two in the ToS for
the new MOC Pop-up shop. But I don’t remember having received an e-mail for
that (yet?).
Change Passwords like SylvainLS says it will save you in the future.

I now can't find the email in any of my accounts.

Was the email address from BrickLink?
If it wasn't you may have unwittingly downloaded a trojan/worm/virus and
it is now infesting your device you downloaded it onto.
I'd recommend running a full antivirus scan on whatever device you viewed
the email on.
