Are there two shades for light grey - one seems much "greener" and a bit darker
than the other. If so, how do you differentiate between them when selling Lego.

Are you talking about Light Grey and Light Blue Grey? The original light Grey
hasn't been made since 2008.

If you are asking about the difference between Light Gray and Light Bluish Gray:
you need good lighting, daylight or cool white. Make sure you have some known
reference bricks (parts that occur only in one of both shades or that you are
sure of). Light Gray is more yellowish and older, Light Bluish Gray is more bluish
and newer.

If you are asking about color variation within Light Gray: yes, that happens
with all colors. Light Gray can be rather old and is prone to yellowing. Look
at the inside of bricks to be sure. Again, good lighting is crucial. There is
one old part, Plate 1x1 with Clip (thin) that comes in a kind of Medium Gray,
which is also classified as Light Gray. For the rest, it is just natural variation
due to material, production batch and yellowing.
