I was in a similar place in January after receiving the Apollo Saturn V as a
gift, and my collection now includes a Soyuz, Space Shuttle, Lunar Rover and
a few other models. I can think of three places to start if you're a space
fan:
There's an open Facebook group dedicated to Saturn V scale (1:110) models:

The Lego Ideas website has a few space models at 1:110 scale. Link below is to
the Soyuz:

There are loads of MOCs on BrickLink - search for 1:110 or Saturn V and they
should pop up.

Unfortunately it's not that simple. People put instructions and .io files
online so that you can copy their creations and there is a button in Stud.io
which allows you to upload all of the pieces you want to BrickLink which then
allows you to buy them.
I prefer to build the model in Stud.io from the instructions rather than downloading
as this allows me to make changes, e.g. one model called for six sand green pieces
which were around £8 apiece in the UK. I replaced them with green pieces which
were nearer 5p each. I was also warned about the cost of dark orange pieces for
the Shuttle so have made mine in white, meaning that the full set came to around
the same cost as the Saturn V.
If you're after a companion piece to the Saturn V, a small model to start
with is the Apollo-Soyuz 'handshake in space' which is part of the Soyuz
1:110 on Lego Ideas. https://ideas.lego.com/projects/95bdcce7-f7e9-463d-a223-48637b704258/updates
It uses elements of the Saturn V and, if you decide you want to keep it, you
can always buy the extra pieces.

| If you liked the Saturn V Rocket then would probably be a great companion.
Although you would probably need to pay a fair bit to get one on the secondary
market.
might also be a good set.
There is also the Space Shuttle and the Space Shuttle.
