I am the seller and I have an order that is not paid for yet where one of the
items I no longer have available. I've advised the buyer by email and said
they can cancel the whole order if they want and/or offered a discount on anything
they might want to replace it with.
If they cancel the whole thing that fixes it but If we continue with the order
how do I remove just that one item from the order?

Long story: it's a part of a minifig that has been in my store for months,
I've obtained the missing minifig parts and re-listed the now complete minifig
in the last few hours. Literally as I'm going through my inventory deleting
the minifig parts one by one someone ordered one of the parts and I only noticed
when it was missing from my inventory list, i checked my orders and yup... someone
ordered the piece.

Personally, I just make sure they are 100% aware of the situation (giving the
option to cancel), and include on the invoice a 200% value credit for the missing
part(s). I don't bother with the item removal request.

The real question is if you had an "Order" then how did the item get
sold again? Once the Order is placed the inventory adjusts itself so it cant
be resold. Well it does for me!
