I would indeed like to sell some sets, but only in France, unlike the rest of
my pieces that I sell worldwide.

You could add a custom weight/size to the sets and then put something below that
amount as your limit for all the other countries in your shipping options (tho
you would also have to disable backup for instant checkout)
