Hi, I'm new to Bricklink and Studio but was advised by a master builder to
try messaging on this forum...

I want to try design / build a 3-4ft model of a character similar to the ones
in the Discovery Centres and parks. Not sure which character but probably Marvel
or Mario.

I have seen knock off versions on the internet but want to build in LEGO.

Where would I even start, is there a way to get a template or use a photo to
give me a start or do I need to build brick by brick in Studio?

It might be best to post that here in the dedicated studio forum

You'll have to do it yourself.

An approaching but existing model won't help, too many differences.

But you should really google this and study how tall statues are built, including
if they're reinforced (steel, aluminium...), glued, or not.

You probably ought to start by building a few small models first to practice.

Although for a model that high, there is very little skill needed. If you have
a 3D model of the character, you can pixilate it / slice it using 2x4 brick dimensions.
Then build it semi-solid (it can be hollow as long as the walls have some strength)
with studs-up 2x4s and 2x2s according to the generated map.
