Hello friends! A few weeks ago I placed my first order on bricklink. More specifically,
it’s been about 2 weeks now. I have tried to reach out to the seller so he/she
can help me track it down, but I haven’t heard of him/her. Should I wait or should
I seek help from bricklink? should also say that the seller is from Italy and
the order is meant to be shipped in Greece.

International shipping can take months, not jjust weeks, despending on the method
used and backlog at ports etc. It's probably not lost, just travelling on
a slow boat.

Was there any info about being on vacation or about longer processing times in
the store terms?

Was it already shipped for sure? Was it shipped with priority or economy method?
Don't know about the Italy-Greece relation but in general economy methods
could take several weeks or even months to get delivered.

I would ask for the tracking number - if there's any - and would check the
status of the shipment. If it's still in Italy after 2 weeks or if it hasn't
been shipped yet I would be worried. If the seller doesn't reply to your
messages you can open an NSS alert but that would be the worst case.

The extreme heat might also be impacting on processing times.
