somebody bought item
 
Part No: 15265 Name: Technic Digger Bucket 15 x 23
* 		15265 Technic Digger Bucket 15 x 23
Parts: Technic {Black}
Since there are only stud dimensions and no packing dimensions (in cm), the buyer
was able to select "Large letter". Large letter is configured as max
thickness of 3 cm, so no way this will fit.
How can I configure (easily) when a cart has item(s) that don't have packing
dimensions specified, the instant checkout is disabled?
I hope I don't have to look for all such items in my store and do a change,
but rather have some general setting somewhere?

put a max size restriction in your shipping options so items that are to large
or are missing dimensions wont go thru.
you can see the list of all items in your inventory without packing dimensions

I set all parts with no packing dimensions or I deem too large for standard First
Class ( US) shipping to Manual. Then they have to check out with manual invoice.
