I've bought some Lego that must have been stored in a cave. And now they
smell like a cave. They are not dirty, just smelly.
Any advice on how to get rid of the smell ?

Place in a dryer bag. Soak in a mixture of white vinegar and water (1 part vinegar
to 4-5 parts water) for at least 48 hours, rinse with water, lay out on a towel
to air dry for least 72 hours. Repeat if needed.

Dawn soap works pretty good.
I wash LEGO in a 5 gallon bucket (19 liter) and use dawn soap to clean. I have
a wooden board I use as an agitator and effectively make a little washing machine
in the bucket.
Another tip if you don’t have time to wash and are not in a hurry - just spread
them out on a blanket or whatever and let them there for a month or two. Eventually
the smell will disappear.
As I sometimes work with huge amounts of Lego I don’t have time to experimenting
with different washing methods and also don’t always have time to check that
all bricks are fit to get wet (like electronics or stickered parts), I just work
with other lots in the meantime and let time work for me.
Works even great for Lego that has smell of smoke!

I have done this as well. We left the Lego sitting out in a closed room for about
2 months and the smell of cat urine was gone! Of course, we sanitized the Lego
first.
