I am currently changing my store from manual invoice to instant checkout but
want to exclude some larger items from instant checkout. I found out from a friend
that you can do this by changing the "pkg type" when adding items but
I can't seem to find the option. He sent me a screenshot and he has the option
but is on the older version of Bricklink and I am on the newer one and can't
see it.

Can anyone help?

Yes—there is a global setting you need to enable.

Go to your store settings (click "My Store" and then "Edit Store" )

Click "Management" along the left

Scroll down to where it says "Store / Inventory Options"

Under "Inventory", check this box: "Enable my weight and my packing
dimensions on each item for sale"

Then, click "Save Changes" and go back to your store inventory, you should
see the drop-down menu for "Pkg Type" now.

And once you have that enabled, you'll want to set the package type for each
item you want to exclude from Instant Checkout to "Manual Only"
