I ordered the Kakapo set, and my order keeps getting pushed back on lego.com.
I think I am getting an update about every week or so punting my shipping date
back further. Weird part is that I can see people apparently selling theirs already.
Can someone tell me what is going on? Lego said it was out of their hands and
up to Bricklink to put the kits together. So is this a struggle to just get everything
packaged up or something?

You probably had one of the glitched 5000 order that were sold by “mistake” which
were expected to have a later delivery

yes!!!same with me and the great fishing boat and safe...
evry week it feels it gets pushed back more and more, i think ill complain, but
then again it wont do much
its only the sets sold from 5000 to 10000 and im not sure why buyt thats what
i was told, but these delays are getting crazy imo
so i feel you!

Be careful what you say when you complain, as they can cancel the order.

Are you sure?
It couldn’t be a refund as it should have been only an authorization, not a payment. 
So it should just be the expiration of that authorization.

Have you checked your order with LEGO?  (Not BL, LEGO Customer Services.)

LEGO charged my card on July 28, 2022, after emailing a tracking number (that
never activated).
Then LEGO emailed on August 22 saying that they didn't have any sets to ship
and were issuing a refund.
Refund appeared on card on August 26.
