Does anybody know why Lego called this object a DIE and not a DICE? If you search
for a dice in Bricklink you will not find it.

Dice is plural of die.

You have one, it's a die. You have two, you have dice. You cannot have a
dice.

Although in common use (here), dice is also used for singular especially with
kids. I've never really understood the need to be grammatically correct here,
'die (dice)' would be an ideal title especially for non-native English
speakers (and quite a few native ones too).

Die is singular and dice is plural.

A common mistake I make all the time.
