Yes, it is possible, if the order is not paid.
As Nubs_Select's screen shot, you can edit the currency.
Or, you can go this page (there is also a link on the orders' page):
https://www.bricklink.com/orderEdit.asp?ID=YOURORDERNUMBER
where YOURORDERNUMBER = is the order's number.
I accept multiple currencies and then a buyer pays in, for example, USD, I keep
the $ in my PayPal balance and then use it to pay my Bricklink's fees, or,
to buy Lego from USA.
If buyer pays in EURO, I keep EURO in my PayPal balance to use later and buy
Lego from Europe....
Otherwise, if I only accept $ CAD , when I want to buy from outside of Canada
and need to pay in a different currency than CAD, PayPal charges me %4 extra
or if I pay on PayPal via my credit car, I get charges 2.5% extra. That's
a good way to save some $$.
So when I don't have Euro in my PayPal's balance, and a buyer in Australia
orders and chooses CAD, I change the currency to EURO and I get paid in EURO.
For the buyer, there is no difference, but for me, I won't get charged 2.5%
or %4 to buy Lego in EURO.

You can't enforce different payment currencies for different buyer locations.
If you accept NZ and CAD, those are offered to all. You can try steering customers
through terms, but you cannot stop an order in the 'wrong' currency.
It is a but strange, a NZ store selling in USD but only wanting payment iin CAD.

used) but I’m curious as to the issue as you are based in NZD so don’t you prefer
everyone to pay in NZD if possible?

I set up my paypal account when i was living in Canada (15 years). The conversion
fees into a NZ bank account are silly. Don't get that many international
orders. So, don't prefer NZD for international orders.
Figure cancelling the order is the only way forward.

Wouldn't you be better off changing your PayPal currency to NZD? You are
living there after all. Come to think of it, are you legally obligated in some
way to accept currency in the currency that is your current country of residence?

And you can change it there. Sorry this didn’t cross my mind earlier as I don’t
have any pending orders I didn’t see the option to change is as available there
so it slipped my mind. In the future the easiest way to access this is to select
customize display on your orders page then enable edit order icon and then you
click the 2 papers after the order number and you can change order details there
